We are very pleased to present the BALIK Tavolata recipe together with the 19-points cook André Jaeger:
For the preparation,specially selected salmon (Atlantic salmon) are mildly smoked in our traditional smoking chamber. The entire salmon sides are then carefully trimmed and freed from bones and smoked skin.
For the Balik Tavolata, the skin is also already loosened so that the whole side can be easily divided into two loins.The slightly domed part will be cut into in 1 cm thick medallions and the other loin will first be shortly heated in the pre-heated oven, then also cut into 1 cm medallions. This creates two dishes that are very different in taste, consistency and texture. André Jaeger is also proposing several side dishes to accompany the Tavlota, or you can create your own.
