The Balik Manufactory


One thing must be said right from the outset: “Balik Räucherei im Toggenburg AG” is the manufactory where arguably the world’s most famous smoked salmon is produced. Here, our smokery master and his team process the noble Salmo Salar according to a secret old Russian recipe into a mouth-watering delicacy, which is then shipped to all corners of the world. The four production steps – watering, salting, smoking, dressing – are all done by hand. The only two pieces of equipment that we use in the Balik Manufactory are electronic scales and a vacuuming machine.

If you wish to know why our Balik Salmon is so delicious, we would be pleased to walk you through the Manufactory. In doing so, we will unveil one or another secret to you about what is probably the world’s most famous smoked salmon and explain to you what is really crucial when smoking the Balik Salmon.
