BALIK stands for the tradition of preparing smoked salmon as it was practiced at the court of the Russian Tsar. The recipe, always kept secret, was passed on orally from one generation to the other.
Twenty-five years ago, it was entrusted to us and we became the guardians of this old tradition. Today the pure and unspoiled environment of the Swiss mountains is the home of the BALIK manufacturing, the ideal location since the salmon comes in touch with nothing else but spring water which we get from our own sources, salt and the smoke from a gentle fire of local hardwood. Years of experience of a passionate team has led to the craftsmanship required to create this unequalled masterpiece in the world of smoked salmon. Enjoy the original!
 
 
BALIK FILLET TSAR NIKOLAJ®

The carful preparation of the selected heart of the salmon fillet revives a tradition from the court of the Tsars of Russia. For special occasions only the very best was good enough.
After the trimming, the silver skin is also stripped off, thus making every gram a delight.
The BALIK fillet TSAR NICOLAJ®, however, is carved very differently: vertically in slices of about 1 cm. The result are succulent medaillons of an unequalled flavour which can be served very attractively.
 
 
BALIK FILLET TSAREVITCH®

BALIK Fillet TSAREVITCH®, is a careful preparation of the selected heart of the salmon fillet, mildly smoked according to BALIK standards. After the trimming, the silver skin is removed, thus making every gram a delight. The BALIK Fillet TSAREVITCH®, however, is carved very differently: vertically in slices of about 1 cm.
 
 
BALIK SKY SNACK

This is a careful preparation of the selected heart of the salmon fillet, mildly smoked according to BALIK standards. After the trimming, the silver skin is removed, thus making every gram a delight. The BALIK Fillet TSAR NIKOLAJ®, however, is carved very differently: vertically, in 4 slices of about 1 cm.

BALIK SJOMGA ®

Sjomga BALIK® is a carefully prepared salmon fillet (salmo salar) subtly smoked and mildly marinated with fresh biologically grown dill. Sjmoga BALIK has no silver skin, therefore no waste -a delicacy to the last gram!
The way of carving is unconventional, yet simple. Carved vertically and parallel to the grain, one obtains about 40 slivers, from which pretty titbit rolls or nicely decorated dishes can be composed.

An additional tip: Mix some dainty Sjomga BALIK slivers with fresh homemade pasta enriched with some double cream - let it stand for a few moments and ... enjoy!
 
 
BALIK SIDE TRIMMED® "Le Classique"

The selected salmon (salmo salar) are subtly smoked in the traditional wood-burning oven according to an old Russian recipe. After the smoking procedure, the salmon sides are trimmed, i.e. the smoking skin and the bones are removed, and the salmon is then vacuumpacked. Thus, its exquisite flavour is preserved and will unfold when the salmon is being carved into thin slices.
Each package contains carving instructions and some ideas for serving. A BALIK side is best served with few but fresh ingredients. The tasty BALIK bread is an ideal complement. Garnish the dish with some lettuce leaves, of different colors, add some crème fraîche and spread black pepper from the mill over the freshly carved slices.

BALIK BEER Duo Pack

Take your time for an exclusive expedition to the BALIK world of delights.
Just as BALIK, our "classic", this special beer has been brewed according to an old Russian porter recipe with brown malt, Russian kwas, hops and water from BALIK's own source at Ebersol.

It then matured during one year in old oak butts and received individual care up to its maturity. Its has been brewed and bottled in limited quantities at the brewery Locher at Appenzell. This brewery with 125 years of experience and family tradition stands for first class quality and natural taste. This very demanding procedure gives the BALIK BEER its noble and characteristic sherry taste and its amber colouring. But this sparkling BALIK BEER may reserve you some surprise. With 11 %vol. of alcohol, it compares much more with a wine than with traditional beer. It as been created not simply as a common beverage, but to accompany harmoniously our BALIK salmon. We recommend to drink BALIK BEER cool, at a temperature of 12° C. BALIK BEER should be stored in a dark place. When stored, the quality of the beer will improve yearly and its taste will become more and more harmonious.
 
 
BALIK bread

Tuned in with BALIK's mild taste, there is the crunchy tasty BALIK bread made of sour dough from finest rye flour. One BALIK bread is just the right quantity to go with a BALIK side.

Pre-baked at 80%, it only needs to be put in the oven, heated at 200°C, for a few minutes.

This fresh bread is specially suited for BALIK titbits; put half a slice of BALIK on a slice of buttered BALIK bread; sprinkle with cress an chives.

BALIK is known for its innovative spirit. This has been proven during the last 20/25 years of our company history.
Today, we give you the answer to this permanent challenge: A new, or even revolutionary carving set for slicing the three BALIK products.
We had to comply with higt standard requirements. The board is scratchproof and irreprochable as to hygiene. The materials are precious, esthetical an ageless. The dimensions as well as the weight of this carving set are moderate and it can easily be handled. The design unites old and new fashion and is signed by a highly qualified professional: Georg Fontana(CH).
It is made of Swiss oak wood, Quercus robur. The sparkling stone is a Norwegian Larkivit. Another particular and parctical aspect of this board is the fact that it can be folded-up in a very simple way. Thus, an innovative step has been accomplished.
